Description

Delightful bars bursting with the sweetness of fresh strawberries, perfect for summer gatherings and nostalgic moments with family.


Ingredients

  • 1 ¾ cups (250g) all-purpose flour
  • â…“ cup (65g) granulated sugar
  • 3 tablespoons (45g) packed light brown sugar
  • ¾ cup (170g) salted butter, melted (or a pinch of salt if using unsalted butter)
  • 1 teaspoon (5ml) pure vanilla extract
  • 3 cups (400g) chopped fresh strawberries (each strawberry quartered then halved)
  • 2 tablespoons (25g) granulated sugar (for strawberries)
  • 1 tablespoon (9g) all-purpose flour (for strawberries)
  • ½ cup (60g) powdered sugar (for glaze)
  • 1 tablespoon (15ml) light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract (for glaze)


Instructions

  1. Start by mixing 1 ¾ cups of all-purpose flour, ⅓ cup of granulated sugar, 3 tablespoons of brown sugar, and a pinch of salt (if using unsalted butter) in a mixing bowl.
  2. Pour in the melted butter and pure vanilla extract. Stir until the mixture starts to combine.
  3. Use your fingertips to toss and form large crumbs.
  4. Press about two-thirds of the crumb mixture into the bottom of your prepared baking pan.
  5. Bake for 15-20 minutes until lightly golden. Remove the pan and let it cool slightly.
  6. Mix the chopped strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of flour in a separate bowl.
  7. Spoon this strawberry mixture over the slightly cooled crust.
  8. Sprinkle the remaining crumb mixture evenly over the top.
  9. Bake again for 30-35 minutes until the juices bubble and the topping becomes a lovely golden brown.
  10. Allow your creation to cool completely in the pan.
  11. Whisk together the powdered sugar, cream, and vanilla extract until smooth in a small bowl.
  12. Drizzle this glaze over the cooled Strawberry Shortcake Bars and cut into 12 pieces.

Notes

For the best flavor, use fresh strawberries and avoid freezing them beforehand. Experiment with different fruits for variety.
