Description

Delightful strawberry pie bars that are easy to prepare and perfect for any gathering, featuring a crumbly crust and luscious strawberry filling.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • Pinch of salt
  • 3/4 cup chilled butter, cubed (1 1/2 sticks)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/3 cup all-purpose flour
  • Pinch of salt
  • 3 cups fresh diced strawberries


Instructions

  1. Preheat the oven to 350°F and grease a 7×11 (2-quart) glass baking dish.
  2. In a large bowl, combine 1 1/2 cups flour, 3/4 cup sugar, and a pinch of salt. Add the cubed butter and use a dough blender until you achieve a crumbly consistency. Set aside 3/4 cup of the crust mixture for the topping.
  3. Evenly press the remaining crust mixture into the bottom of the greased baking dish.
  4. Bake the crust for about 15 minutes, then remove from the oven and set aside to cool slightly.
  5. In a separate large bowl, whisk the two eggs, then add 1 cup sugar, 1/2 cup sour cream, 1/3 cup flour, and a pinch of salt. Mix until well combined.
  6. Gently fold in the diced strawberries.
  7. Spoon the strawberry filling mixture evenly over the baked crust.
  8. Sprinkle the reserved crust mixture on top of the filling.
  9. Bake for 45-55 minutes, or until the top turns lightly browned and the filling appears set.
  10. Allow cooling for one hour before cutting into bars and serving.

Notes

Consider using a variety of strawberries for unique flavors. For presentation, dust with powdered sugar and garnish with fresh mint or whipped cream.
