Delightful strawberry pie bars that are easy to prepare and perfect for any gathering, featuring a crumbly crust and luscious strawberry filling.
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- Pinch of salt
- 3/4 cup chilled butter, cubed (1 1/2 sticks)
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/3 cup all-purpose flour
- Pinch of salt
- 3 cups fresh diced strawberries
Instructions
- Preheat the oven to 350°F and grease a 7×11 (2-quart) glass baking dish.
- In a large bowl, combine 1 1/2 cups flour, 3/4 cup sugar, and a pinch of salt. Add the cubed butter and use a dough blender until you achieve a crumbly consistency. Set aside 3/4 cup of the crust mixture for the topping.
- Evenly press the remaining crust mixture into the bottom of the greased baking dish.
- Bake the crust for about 15 minutes, then remove from the oven and set aside to cool slightly.
- In a separate large bowl, whisk the two eggs, then add 1 cup sugar, 1/2 cup sour cream, 1/3 cup flour, and a pinch of salt. Mix until well combined.
- Gently fold in the diced strawberries.
- Spoon the strawberry filling mixture evenly over the baked crust.
- Sprinkle the reserved crust mixture on top of the filling.
- Bake for 45-55 minutes, or until the top turns lightly browned and the filling appears set.
- Allow cooling for one hour before cutting into bars and serving.
Notes
Consider using a variety of strawberries for unique flavors. For presentation, dust with powdered sugar and garnish with fresh mint or whipped cream.
