Delicious Strawberry Pie Bars featuring fresh strawberries, a buttery crust, and a creamy filling, perfect for sharing.
Ingredients
- 1 1/2 cups all-purpose flour (for the crust and topping)
- 3/4 cup granulated sugar (for the crust and topping)
- Pinch of salt (for the crust and topping)
- 1 1/2 sticks chilled butter, cubed (3/4 cup, for the crust)
- 2 large eggs (for the filling)
- 1 cup granulated sugar (for the filling)
- 1/2 cup sour cream (for the filling)
- 1/3 cup all-purpose flour (for the filling)
- Pinch of salt (for the filling)
- 3 cups fresh diced strawberries (for the filling)
Instructions
- Preheat the oven to 350°F and grease a 7×11 glass baking dish.
- In a large bowl, combine 1 1/2 cups of all-purpose flour, 3/4 cup granulated sugar, and a pinch of salt.
- Cube the chilled butter and mix it with the dry ingredients until crumbly.
- Reserve 3/4 cup of the crust mixture and press the remainder into the bottom of the baking dish. Bake for 15 minutes.
- In another bowl, whisk together 2 large eggs, 1 cup granulated sugar, 1/2 cup sour cream, 1/3 cup all-purpose flour, and a pinch of salt.
- Stir in 3 cups of diced strawberries gently.
- Pour the filling over the baked crust and sprinkle the reserved crust mixture on top.
- Bake for 45-55 minutes until the top is golden and the filling is set.
- Allow to cool for an hour before cutting into squares.
Notes
Choose ripe strawberries for the best flavor. Allow ample cooling time before slicing for a cleaner cut.
