Description

Delicious Strawberry Pie Bars featuring fresh strawberries, a buttery crust, and a creamy filling, perfect for sharing.


Ingredients

  • 1 1/2 cups all-purpose flour (for the crust and topping)
  • 3/4 cup granulated sugar (for the crust and topping)
  • Pinch of salt (for the crust and topping)
  • 1 1/2 sticks chilled butter, cubed (3/4 cup, for the crust)
  • 2 large eggs (for the filling)
  • 1 cup granulated sugar (for the filling)
  • 1/2 cup sour cream (for the filling)
  • 1/3 cup all-purpose flour (for the filling)
  • Pinch of salt (for the filling)
  • 3 cups fresh diced strawberries (for the filling)


Instructions

  1. Preheat the oven to 350°F and grease a 7×11 glass baking dish.
  2. In a large bowl, combine 1 1/2 cups of all-purpose flour, 3/4 cup granulated sugar, and a pinch of salt.
  3. Cube the chilled butter and mix it with the dry ingredients until crumbly.
  4. Reserve 3/4 cup of the crust mixture and press the remainder into the bottom of the baking dish. Bake for 15 minutes.
  5. In another bowl, whisk together 2 large eggs, 1 cup granulated sugar, 1/2 cup sour cream, 1/3 cup all-purpose flour, and a pinch of salt.
  6. Stir in 3 cups of diced strawberries gently.
  7. Pour the filling over the baked crust and sprinkle the reserved crust mixture on top.
  8. Bake for 45-55 minutes until the top is golden and the filling is set.
  9. Allow to cool for an hour before cutting into squares.

Notes

Choose ripe strawberries for the best flavor. Allow ample cooling time before slicing for a cleaner cut.
