Description

A delightful cake that combines the essence of summer with rich strawberry flavor, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup strawberry puree
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons milk (for glaze)
  • A few drops of pink food coloring (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add this dry mixture to the wet ingredients, alternating with the strawberry puree. Start and end with the flour mixture.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added strawberry flavor, consider folding in chopped fresh strawberries. Store leftover cake in an airtight container for up to three days or freeze individual slices.
