Delightful Strawberry Lemon Bars with a buttery shortbread crust and a luscious lemon filling topped with fresh strawberries. Perfect for any occasion!
Ingredients
- 2 cups all-purpose flour
- ½ cup powdered sugar
- 1 cup salted butter
- 1 tbsp lemon zest
- 6 eggs
- 2 cups granulated sugar
- 2 tbsp lemon zest
- 2/3 cup lemon juice
- ½ cup all-purpose flour
- 1 cup strawberries (hulled and sliced in half)
Instructions
- Preheat oven to 350°F and line a 9″x13″ pan with parchment paper.
- Make the crust: In a food processor, combine 2 cups of flour, ½ cup powdered sugar, 1 cup of salted butter, and 1 tbsp lemon zest. Process until the dough comes together.
- Press the dough into the prepared pan, covering the bottom and sides.
- Bake the crust for 20 minutes or until golden.
- Prepare the filling: Blend remaining flour, eggs, granulated sugar, lemon zest, lemon juice, and strawberries in the food processor until smooth.
- Pour the filling over the warm crust and spread evenly.
- Bake for 30-35 minutes until the center is set.
- Cool for 1 hour, then chill for at least 3 hours.
- Slice into 24 bars and dust with powdered sugar before serving.
