Description

Delightful Strawberry Lemon Bars with a buttery shortbread crust and a luscious lemon filling topped with fresh strawberries. Perfect for any occasion!


Ingredients

  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup salted butter
  • 1 tbsp lemon zest
  • 6 eggs
  • 2 cups granulated sugar
  • 2 tbsp lemon zest
  • 2/3 cup lemon juice
  • ½ cup all-purpose flour
  • 1 cup strawberries (hulled and sliced in half)


Instructions

  1. Preheat oven to 350°F and line a 9″x13″ pan with parchment paper.
  2. Make the crust: In a food processor, combine 2 cups of flour, ½ cup powdered sugar, 1 cup of salted butter, and 1 tbsp lemon zest. Process until the dough comes together.
  3. Press the dough into the prepared pan, covering the bottom and sides.
  4. Bake the crust for 20 minutes or until golden.
  5. Prepare the filling: Blend remaining flour, eggs, granulated sugar, lemon zest, lemon juice, and strawberries in the food processor until smooth.
  6. Pour the filling over the warm crust and spread evenly.
  7. Bake for 30-35 minutes until the center is set.
  8. Cool for 1 hour, then chill for at least 3 hours.
  9. Slice into 24 bars and dust with powdered sugar before serving.

Notes

For best results, use room temperature ingredients and check the crust and filling closely while baking.
