A nostalgic strawberry crunch cheesecake with a creamy filling, light whipped cream, and a buttery graham cracker crust.
Ingredients
- 2 cups crushed graham crackers
- 1/2 cup melted butter
- 2 cups whipped cream
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- In a medium bowl, combine crushed graham crackers and melted butter. Stir until the crumbs are evenly coated.
- Pour the mixture into an 8-inch or 9-inch springform pan and press firmly. Freeze for 10 minutes to set.
- In a large bowl, beat softened cream cheese until smooth, then add powdered sugar and vanilla, beating until fluffy.
- Gently fold whipped cream into cream cheese mixture until no streaks remain.
- Smooth the cream cheese mixture over the chilled crust.
- Mix sliced strawberries with strawberry jam, then spoon over cheesecake.
- Optionally, sprinkle extra crushed graham crackers on top.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Release from the springform, slice, and enjoy.
Notes
For a special touch, consider adding a layer of your favorite fruit preserves beneath the cream cheese filling.
