Description

A nostalgic strawberry crunch cheesecake with a creamy filling, light whipped cream, and a buttery graham cracker crust.


Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 2 cups whipped cream
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam


Instructions

  1. In a medium bowl, combine crushed graham crackers and melted butter. Stir until the crumbs are evenly coated.
  2. Pour the mixture into an 8-inch or 9-inch springform pan and press firmly. Freeze for 10 minutes to set.
  3. In a large bowl, beat softened cream cheese until smooth, then add powdered sugar and vanilla, beating until fluffy.
  4. Gently fold whipped cream into cream cheese mixture until no streaks remain.
  5. Smooth the cream cheese mixture over the chilled crust.
  6. Mix sliced strawberries with strawberry jam, then spoon over cheesecake.
  7. Optionally, sprinkle extra crushed graham crackers on top.
  8. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Release from the springform, slice, and enjoy.

Notes

For a special touch, consider adding a layer of your favorite fruit preserves beneath the cream cheese filling.
