Description

A delightful cheesecake featuring a rich cream cheese filling, fresh strawberry puree, and a crunchy vanilla cookie topping, perfect for summer gatherings.

Ingredients

  • 2 cups vanilla cookies (crushed)
  • 1/2 cup butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 cup strawberries (pureed)
  • 1 cup whipped cream
  • 1 cup strawberry crunch topping

Instructions

  1. Prepare the cheesecake crust by mixing crushed vanilla cookies with melted butter until combined. Press this mixture into the bottom of a springform pan to form a base.
  2. In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth.
  3. Add the strawberry puree to the cream cheese mixture and mix until well blended.
  4. Gently fold in the whipped cream to maintain its airy texture. Spread this filling evenly over the crust in the springform pan.
  5. Sprinkle the strawberry crunch topping over the cheesecake.
  6. Refrigerate for a minimum of four hours, allowing it to set before serving.

Notes

Chill mixing bowls and beaters before making the whipped cream for a fluffier texture. For perfect slices, use a warm, wet knife.
