Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl.
- Mix the melted butter, eggs, buttermilk, and vanilla extract until well combined in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped strawberries.
- Beat the cream cheese and powdered sugar until smooth in a separate bowl.
- Fill each muffin cup halfway with the batter, add a spoonful of the cream cheese mixture, then top with more muffin batter until filled almost to the top.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool slightly before serving.
