Description

Delightful strawberry cinnamon rolls filled with fresh strawberries and a hint of cinnamon, topped with creamy icing, perfect for breakfast.


Ingredients

  • 3/4 cup milk, warmed
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/3 cup butter, softened
  • 2 eggs + 1 yolk
  • 3 1/4 cups bread flour
  • 1/2 teaspoon salt
  • 2 cups strawberries, chopped
  • 1/2 cup granulated sugar (for filling)
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 4 ounces cream cheese, softened (for icing)
  • 2 tablespoons butter, softened (for icing)
  • 1 cup powdered sugar
  • 2 tablespoons strawberry filling (for icing)
  • 1-2 tablespoons milk or cream (for icing)


Instructions

  1. Combine warm milk, granulated sugar, and instant yeast in a stand mixer bowl. Let it sit for about 10 minutes until it becomes foamy.
  2. Add softened butter, eggs, yolk, bread flour, and salt to the mixture. Beat on medium speed for about 6-8 minutes until smooth and elastic.
  3. Transfer the dough to a greased bowl, cover it with a kitchen towel, and let it rise for approximately one hour until doubled in size.
  4. Prepare the filling by combining chopped strawberries, 1/2 cup sugar, and lemon juice in a saucepan. Cook over medium heat until softened.
  5. Mix the cornstarch with a little water until smooth, then add to the saucepan along with the cinnamon. Bring to a low boil, then simmer until thick. Allow it to cool.
  6. Punch down the risen dough. Roll it out into a 15×10-inch rectangle. Spread the filling evenly across the surface.
  7. Roll the dough tightly into a log and cut it into 12 rolls. Place the rolls in a greased baking pan and let them rise for another 45 minutes until doubled in size.
  8. Preheat your oven to 375°F (190°C). Bake for 20-25 minutes until the internal temperature reaches 190°F (88°C).
  9. Mix softened cream cheese, 2 tablespoons butter, powdered sugar, strawberry filling, and milk until smooth and of drizzling consistency.
  10. Drizzle the icing over the rolls once they are cool.

Notes

Use fresh strawberries for the filling for the best flavor. If the dough is too sticky, lightly flour your hands when handling it.
