Description

Delicious and nutritious protein balls that capture the flavors of strawberry cheesecake in a guilt-free snack.

Ingredients

  • 1 cup pitted dates
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup strawberry protein powder
  • 1/4 cup almond butter
  • 1/4 cup coconut flakes
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, chopped

Instructions

  1. In a food processor, combine the pitted dates, rolled oats, almond flour, and strawberry protein powder.
  2. Add the almond butter, coconut flakes, vanilla extract, and chopped strawberries.
  3. Pulse until the mixture is well combined and sticky.
  4. Scoop out small portions of the mixture and roll them into bite-sized balls.
  5. Place the balls on a baking sheet.
  6. Refrigerate for at least 30 minutes.

Notes

Use fresh, ripe strawberries to enhance flavor. If the mixture is too sticky, dampen your hands while rolling.
