Description

A fresh and vibrant way to enjoy healthy eating, these homemade spring rolls are filled with fresh vegetables and served with a creamy peanut sauce.


Ingredients

  • Rice paper wrappers
  • Fresh lettuce
  • Carrots
  • Cucumbers
  • Bell peppers
  • Fresh mint
  • Fresh basil
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic
  • Water


Instructions

  1. Prepare all fresh veggies by slicing them into thin strips.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, and minced garlic. Adjust water for desired sauce consistency.
  3. Soak a rice paper wrapper in warm water for 10-15 seconds until soft.
  4. Place a small amount of veggies and herbs in the center of the wrapper.
  5. Fold the sides over and roll tightly from the bottom up.
  6. Repeat with remaining wrappers and filling.
  7. Serve with peanut sauce for dipping.

Notes

Experiment with different vegetable combinations for variety. Store leftover rolls in an airtight container for up to 24 hours.
