Ingredients
- Rice paper wrappers
- Fresh lettuce
- Carrots
- Cucumbers
- Bell peppers
- Fresh mint
- Fresh basil
- Peanut butter
- Soy sauce
- Lime juice
- Garlic
- Water
Instructions
- Prepare all fresh veggies by slicing them into thin strips.
- In a bowl, mix peanut butter, soy sauce, lime juice, and minced garlic. Adjust water for desired sauce consistency.
- Soak a rice paper wrapper in warm water for 10-15 seconds until soft.
- Place a small amount of veggies and herbs in the center of the wrapper.
- Fold the sides over and roll tightly from the bottom up.
- Repeat with remaining wrappers and filling.
- Serve with peanut sauce for dipping.
Notes
Experiment with different vegetable combinations for variety. Store leftover rolls in an airtight container for up to 24 hours.
