Description

A vibrant and refreshing salad featuring mixed greens, crunchy vegetables, and sweet mango.


Ingredients

  • 2 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers
  • 1 ripe mango, diced
  • 1/2 cup sliced cucumbers
  • 1 jalapeño, thinly sliced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the mixed greens, shredded carrots, thinly sliced bell peppers, diced mango, sliced cucumbers, jalapeño (if using), chopped cilantro, and chopped green onions.
  2. In a separate bowl, whisk together the olive oil, rice vinegar, soy sauce, grated ginger, honey, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad and toss gently to combine all elements evenly.
  4. Serve immediately, or chill in the refrigerator for 30 minutes to enhance the flavors.

Notes

Choose ripe mangoes for the sweetest flavor, and allow the salad to rest for 30 minutes before serving for the best taste.
