Ingredients
- – 2 tablespoons (30 ml) vegetable oil
- – 1 small yellow onion, chopped
- – 1 clove garlic, minced
- – 2 large eggs, beaten
- – 1 cup (240 ml) ricotta cheese (low or full-fat ricotta will work)
- – 1/2 cup (50 g) cheddar cheese, shredded
- – 1/2 cup (50 g) feta cheese, crumbled
- – 10 ounce (280 g) package frozen chopped spinach, defrosted and drained well (I use my hands to squeeze as much liquid out of the spinach as possible)
- – 1/4 teaspoon (1 ml) kosher salt
Instructions
- Set your oven to preheat at 350°F.
- Warm the vegetable oil in a sauté pan over medium heat and sauté the chopped onions for about four minutes until they are soft.
- Incorporate the minced garlic, cooking for another minute before setting the mixture aside to cool.
- In a bowl, beat the eggs and mix in the ricotta, cheddar, and feta cheeses.
- Blend the drained spinach, kosher salt, and the cooled onion-garlic mixture into the egg and cheese blend.
- Distribute the mixture evenly into greased mini muffin tins.
- Bake for 20 to 25 minutes until the tops are golden and the centers are firm. If needed, use a sharp knife to loosen the edges for easy removal.
