Ingredients

  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 small yellow onion, chopped
  • – 1 clove garlic, minced
  • – 2 large eggs, beaten
  • – 1 cup (240 ml) ricotta cheese (low or full-fat ricotta will work)
  • – 1/2 cup (50 g) cheddar cheese, shredded
  • – 1/2 cup (50 g) feta cheese, crumbled
  • – 10 ounce (280 g) package frozen chopped spinach, defrosted and drained well (I use my hands to squeeze as much liquid out of the spinach as possible)
  • – 1/4 teaspoon (1 ml) kosher salt


Instructions

  1. Set your oven to preheat at 350°F.
  2. Warm the vegetable oil in a sauté pan over medium heat and sauté the chopped onions for about four minutes until they are soft.
  3. Incorporate the minced garlic, cooking for another minute before setting the mixture aside to cool.
  4. In a bowl, beat the eggs and mix in the ricotta, cheddar, and feta cheeses.
  5. Blend the drained spinach, kosher salt, and the cooled onion-garlic mixture into the egg and cheese blend.
  6. Distribute the mixture evenly into greased mini muffin tins.
  7. Bake for 20 to 25 minutes until the tops are golden and the centers are firm. If needed, use a sharp knife to loosen the edges for easy removal.
