Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 cup quinoa, rinsed (185 g)
- 2 cups vegetable broth (480 ml)
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (225 g)
- 5 ounces fresh spinach (140 g)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1/2 teaspoon paprika (1 g)
- 1/4 cup grated alternative cheese (25 g)
- Optional: 1/4 cup chopped fresh parsley (15 g)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
- Stir in the rinsed quinoa and cook for 1-2 minutes, allowing it to toast slightly.
- Pour in the 2 cups of vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes.
- Remove the lid and stir in the fresh spinach, allowing it to wilt.
- Season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika.
- Sprinkle the grated Parmesan cheese over the mixture and stir to combine.
- Remove the skillet from the heat and let it sit for 5 minutes.
- Optionally, garnish with chopped fresh parsley before serving.
