Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 cup quinoa, rinsed (185 g)
  • 2 cups vegetable broth (480 ml)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (225 g)
  • 5 ounces fresh spinach (140 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1/2 teaspoon paprika (1 g)
  • 1/4 cup grated alternative cheese (25 g)
  • Optional: 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute.
  4. Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
  5. Stir in the rinsed quinoa and cook for 1-2 minutes, allowing it to toast slightly.
  6. Pour in the 2 cups of vegetable broth and bring the mixture to a boil.
  7. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes.
  8. Remove the lid and stir in the fresh spinach, allowing it to wilt.
  9. Season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika.
  10. Sprinkle the grated Parmesan cheese over the mixture and stir to combine.
  11. Remove the skillet from the heat and let it sit for 5 minutes.
  12. Optionally, garnish with chopped fresh parsley before serving.
