Description

A delicious, comforting soup that combines udon noodles with a rich peanut broth and a hint of spice, perfect for quick meals any day of the week.


Ingredients

  • 1 serving frozen udon noodles
  • 1 tsp minced garlic
  • 1 tsp diced green onions
  • 1 1/4 tsp sugar
  • 1/2 tbsp chicken bouillon
  • 1 1/2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1/4 tsp rice or apple cider vinegar
  • 1/2 tsp sesame oil
  • 2 tbsp unsweetened peanut butter
  • 1 tbsp chili oil
  • 1 1/2 cups hot water
  • 1/4 tsp salt (if needed)
  • 1 hard-boiled/jammy egg
  • Additional diced green onion, roasted sesame seeds, and chili oil for garnish


Instructions

  1. Soak the frozen udon noodles in hot water or boil for 1 minute. Drain and set aside.
  2. In a bowl, mix together all the soup ingredients except for the hot water.
  3. Pour in the hot water and stir until well combined.
  4. Taste for seasoning and adjust with salt if needed.
  5. Add the udon noodles to the soup and garnish with your preferred toppings.

Notes

For added crunch, top with roasted peanuts or crispy garlic. Adjust spice levels to your preference.
