Ingredients

  • 1 cup (150 g) edamame beans, shelled
  • 2 tablespoon s (30 ml) soy sauce
  • 1 tablespoon (15 ml) sesame oil
  • 1 tablespoon (15 ml) rice vinegar
  • 1 tablespoon (16 g) miso paste
  • 1 teaspoon (5 g) chili paste or sriracha
  • 1 teaspoon (5 g) honey
  • 1 clove garlic, minced
  • 1 tablespoon (9 g) sesame seeds
  • 1/2 cup (60 g) sliced green onions
  • 1/2 cup (75 g) diced red bell pepper
  • 1/4 cup (20 g) chopped fresh cilantro
  • Salt to taste


Instructions

  1. Cook the edamame beans according to package instructions, then drain and set aside to cool.
  2. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, miso paste, chili paste or sriracha, honey, and minced garlic until smooth.
  3. In a large mixing bowl, combine the cooled edamame beans, sliced green onions, diced red bell pepper, and chopped fresh cilantro.
  4. Pour the dressing over the edamame mixture and toss until everything is well coated.
  5. Add the sesame seeds and toss lightly to combine.
  6. Taste and season with salt if needed.
  7. Serve the salad immediately or refrigerate for 30 minutes to allow flavors to meld.
