Ingredients
- 1 cup (150 g) edamame beans, shelled
- 2 tablespoon s (30 ml) soy sauce
- 1 tablespoon (15 ml) sesame oil
- 1 tablespoon (15 ml) rice vinegar
- 1 tablespoon (16 g) miso paste
- 1 teaspoon (5 g) chili paste or sriracha
- 1 teaspoon (5 g) honey
- 1 clove garlic, minced
- 1 tablespoon (9 g) sesame seeds
- 1/2 cup (60 g) sliced green onions
- 1/2 cup (75 g) diced red bell pepper
- 1/4 cup (20 g) chopped fresh cilantro
- Salt to taste
Instructions
- Cook the edamame beans according to package instructions, then drain and set aside to cool.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, miso paste, chili paste or sriracha, honey, and minced garlic until smooth.
- In a large mixing bowl, combine the cooled edamame beans, sliced green onions, diced red bell pepper, and chopped fresh cilantro.
- Pour the dressing over the edamame mixture and toss until everything is well coated.
- Add the sesame seeds and toss lightly to combine.
- Taste and season with salt if needed.
- Serve the salad immediately or refrigerate for 30 minutes to allow flavors to meld.
