Ingredients
- 8 ounce (227 g) s (225 grams) edamame, shelled
- 8 ounce (227 g) s (225 grams) rice noodles
- 1 tablespoon (15 ml) (15 milliliters) vegetable oil
- 2 cup (480 ml) s (about 300 grams) mixed salad greens
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tablespoon (15 ml) (15 grams) sesame seeds
- For the Miso Sesame Dressing:
- 2 tablespoon (30 ml) s (30 grams) white miso paste
- 1 tablespoon (15 ml) (15 milliliters) soy sauce
- 1 tablespoon (15 ml) (15 milliliters) rice vinegar
- 1 tablespoon (15 ml) (15 milliliters) sesame oil
- 1 tablespoon (15 ml) (15 grams) honey or maple syrup
- 1 teaspoon (5 ml) (5 milliliters) sriracha or chili sauce
- 1 clove garlic, minced
- 1 teaspoon (5 ml) (5 grams) fresh ginger, grated
Instructions
- Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
- In the same pot, bring water to a boil again and add the shelled edamame. Cook for 3-4 minutes until tender. Drain and set aside.
- In a small bowl, whisk together white miso paste, soy sauce, rice vinegar, sesame oil, honey or maple syrup, sriracha or chili sauce, minced garlic, and grated ginger to make the dressing.
- Heat vegetable oil in a pan over medium heat. Add sesame seeds and toast until golden brown. Remove from heat and set aside.
- In a large mixing bowl, combine cooked rice noodles, edamame, mixed salad greens, sliced red bell pepper, julienned carrot, and sliced green onions.
- Pour the miso sesame dressing over the noodle salad and toss well to combine.
- Sprinkle toasted sesame seeds over the salad for garnish.
- Serve the spicy edamame noodle salad chilled or at room temperature.
