Ingredients

  • 8 ounce (227 g) s (225 grams) edamame, shelled
  • 8 ounce (227 g) s (225 grams) rice noodles
  • 1 tablespoon (15 ml) (15 milliliters) vegetable oil
  • 2 cup (480 ml) s (about 300 grams) mixed salad greens
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tablespoon (15 ml) (15 grams) sesame seeds
  • For the Miso Sesame Dressing:
  • 2 tablespoon (30 ml) s (30 grams) white miso paste
  • 1 tablespoon (15 ml) (15 milliliters) soy sauce
  • 1 tablespoon (15 ml) (15 milliliters) rice vinegar
  • 1 tablespoon (15 ml) (15 milliliters) sesame oil
  • 1 tablespoon (15 ml) (15 grams) honey or maple syrup
  • 1 teaspoon (5 ml) (5 milliliters) sriracha or chili sauce
  • 1 clove garlic, minced
  • 1 teaspoon (5 ml) (5 grams) fresh ginger, grated


Instructions

  1. Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
  2. In the same pot, bring water to a boil again and add the shelled edamame. Cook for 3-4 minutes until tender. Drain and set aside.
  3. In a small bowl, whisk together white miso paste, soy sauce, rice vinegar, sesame oil, honey or maple syrup, sriracha or chili sauce, minced garlic, and grated ginger to make the dressing.
  4. Heat vegetable oil in a pan over medium heat. Add sesame seeds and toast until golden brown. Remove from heat and set aside.
  5. In a large mixing bowl, combine cooked rice noodles, edamame, mixed salad greens, sliced red bell pepper, julienned carrot, and sliced green onions.
  6. Pour the miso sesame dressing over the noodle salad and toss well to combine.
  7. Sprinkle toasted sesame seeds over the salad for garnish.
  8. Serve the spicy edamame noodle salad chilled or at room temperature.

  • Consider adding grilled chicken or tofu for extra protein.
  • Customize the salad with your favorite veggies like cucumbers or cherry tomatoes.
