Ingredients

  • 2 lbs (900 g) boneless, skinless chicken thighs
  • 2 tbsp (30 ml) olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 g) canned pumpkin puree
  • 2 tbsp (30 g) almond butter
  • 2 tbsp (30 g) tomato paste
  • 1 tbsp (15 g) cocoa powder
  • 1 tbsp (8 g) ground cumin
  • 1 tbsp (8 g) chili powder
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (1 g) ground coriander
  • 1/2 tsp (1 g) smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 cup (185 g) jasmine rice
  • 1/4 cup (10 g) chopped fresh cilantro
  • 1 lime, cut into wedges


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the chicken thighs with salt and pepper on both sides.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Sear the chicken thighs for 3-4 minutes per side until browned.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the remaining 1 tablespoon of olive oil.
  7. Sauté the chopped onion until translucent, about 5 minutes.
  8. Add the minced garlic and cook for an additional 1 minute.
  9. Stir in the chicken broth, pumpkin puree, almond butter, and tomato paste.
  10. Add the cocoa powder, cumin, chili powder, cinnamon, coriander, and smoked paprika.
  11. Stir the mixture until well combined and bring to a simmer.
  12. Return the chicken thighs to the skillet, nestling them into the sauce.
  13. Cover the skillet and transfer it to the preheated oven.
  14. Bake for 25-30 minutes, until the chicken is cooked through.
  15. Meanwhile, rinse the jasmine rice under cold water until the water runs clear.
  16. Cook the rice according to package instructions.
  17. Remove the chicken from the oven and let it rest for a few minutes.
  18. Fluff the cooked rice with a fork and divide it among serving bowls.
  19. Top each bowl with the spiced pumpkin mole chicken.
  20. Garnish with chopped fresh cilantro.
  21. Serve with lime wedges on the side.
