Description

A quick and delicious same-day sourdough bread recipe that captures the essence of traditional sourdough without the long wait.


Ingredients

  • 410 grams all-purpose flour
  • 290 grams water
  • 160 grams active sourdough starter
  • 8 grams salt


Instructions

  1. In a large bowl, mix the water, sourdough starter, and salt until well combined.
  2. Slowly add the flour and mix until no dry flour remains.
  3. Cover and let it rest for 30 minutes.
  4. Perform four sets of stretch and folds every 20 minutes.
  5. Let the dough rise at room temperature for 3 to 4 hours, until it nearly doubles in size.
  6. Shape the dough into a ball and place in a floured banneton.
  7. Proof for an additional 2 hours.
  8. Preheat the oven to 460°F (238°C).
  9. Score the dough and bake covered in a Dutch oven for 30 minutes, then uncovered for 10 minutes.
  10. Cool on a rack before slicing.
