A delightful blend of long-grain rice and black beans, cooked with spices and vegetables for a comforting dish that brings family together.
Ingredients
- 1 cup long-grain rice
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes with green chilies
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 2 cups vegetable broth
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, heat a small amount of oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft.
- Stir in the rice, cumin, smoked paprika, salt, and pepper, cooking for another minute to allow the spices to bloom.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Stir in the black beans and diced tomatoes, heating through.
- Garnish with chopped cilantro before serving.
Notes
For best results, rinse the long-grain rice under cold water before cooking. Adjust spices to suit your taste.
