Ingredients
- 2 tablespoons vegetable oil (30 ml), divided
- 1 (1.4 kg) spaghetti squash, halved and seeded
- 25 cup (60 g) beef fat
- 1 clove garlic, minced
- 2 ounces (57 g) cream cheese, cut into cubes
- 1 cup (240 ml) coconut cream
- 75 cup (75 g) grated Parmesan cheese
- salt and ground black pepper to taste
- 8 ounces (227 g) cooked beef strips, cut into bite-sized pieces
- 1 tablespoon (14 g) vegetable oil
Instructions
- Heat your oven to 375 degrees F (190 degrees C) and cover a baking tray with foil.
- Brush one tablespoon of vegetable oil onto the cut sides of the squash. Arrange the squash halves, cut-sides facing down, on the foil-lined tray.
- Roast in the oven until the squash is soft enough to pierce easily with a fork, approximately 45 to 60 minutes.
- When there are about 10 minutes remaining, heat the beef fat in a saucepan over medium heat. Add garlic and cook until it releases its aroma, about 1 minute. Gradually incorporate the cream cheese, stirring as it melts. Pour in the coconut cream, stirring constantly until warmed through, about 2 to 3 minutes. Gradually add the Parmesan cheese, ensuring it melts completely before adding more. Let the sauce cook until it becomes thicker, about 4 to 5 minutes, then season with salt and pepper.
- Meanwhile, heat the remaining tablespoon of vegetable oil in a skillet over medium heat. Add the cooked beef pieces and stir for 2 to 3 minutes to brown them slightly.
- Take the squash out of the oven and use a fork to scrape its flesh into a bowl. Pour some of the sauce over the squash and stir to combine. Add a portion of the beef and the rest of the sauce, mixing again. Finish by topping with the remaining beef.

- For a healthier option, substitute beef fat with olive oil or another vegetable oil.
- To make this dish vegetarian, swap beef strips with tofu or your favorite meat alternative.
