Description

Ingredients

  • 1 to 2 teaspoons Vegetable Oil (5 to 10 ml)
  • 1 small Zucchini, diced (150 g)
  • Half a Bell Pepper, diced (75 g)
  • 1/4 Red Onion, diced (30 g)
  • 1/2 teaspoon (3 ml) dried Oregano
  • 1/4 teaspoon (1 ml) ground Cumin
  • Salt and Black Pepper
  • 3/4 cup cooked Black Beans, drained and rinsed if using canned (180 ml, 240 g)
  • 1/2 cup Corn Kernels, drained well if using canned (120 ml, 150 g)
  • 1/2 cup Salsa (120 ml)
  • 2 ounces Cheddar Cheese, shredded and divided (55 g)
  • 1 small Spaghetti Squash, about 30 ounces or 1.8 lb whole (850 g)
  • 1/2 teaspoon Vegetable Oil (2.5 ml)
  • Salt and Black Pepper


Instructions

  1. Preheat the oven to 425°F. For a toaster oven, choose the “BAKE” option and place the rack on the lowest level. Lightly coat a baking sheet with oil or use a silicone mat.
  2. Carefully pierce the squash several times with a sharp knife, then microwave for 4 to 5 minutes. Slice the squash in half, being cautious of the steam, and remove the seeds.
  3. Apply oil to each half and generously season with salt and black pepper. Arrange the squash on the baking sheet and bake until it can be easily pierced with a fork, about 30 to 45 minutes, depending on its size.
  4. Take the squash out of the oven and let it cool for no less than 5 minutes. Use a fork to shred the flesh into spaghetti-like strands, leaving some inside to maintain the bowl shape for stuffing later.
  5. While the squash is baking, warm vegetable oil in a skillet over medium heat. Add the diced onion, zucchini, bell pepper, cumin, oregano, salt, and pepper. Cook, stirring often, until the veggies are tender, approximately 8 to 10 minutes.
  6. Remove the skillet from the heat, then add the black beans, corn, and salsa. Mix thoroughly, taste, and adjust seasoning to your liking.
  7. Combine the spaghetti-like squash strands and half of the cheese with the skillet mixture, stirring well. Fill the squash bowls with this mixture and sprinkle the remaining cheese on top.
  8. Bake at 350°F without covering until everything is heated and the cheese is melted, around 10 minutes.
  9. Broil for 1 to 2 minutes until the cheese is bubbly and lightly browned.
  10. Enjoy warm with your preferred burrito toppings.

  • Make sure to thoroughly wash and rinse the black beans to reduce sodium and enhance flavor.
