Ingredients

  • 2 pounds (907 g) yellow squash sliced 1/4 inch thick (about 5 medium-sized squash)
  • 1/4 cup (60 ml) vegetable oil
  • 1/2 cup (120 ml) diced onion
  • 1/2 teaspoon (3 ml) garlic powder
  • 3/4 teaspoon (4 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 cup (120 ml) plain yogurt
  • 1 large egg beaten
  • 1 cup (240 ml) shredded cheddar cheese
  • 1/2 cup (120 ml) grated Parmesan cheese
  • 1 cup (240 ml) breadcrumbs finely crushed (about 25 crackers)


Instructions

  1. In a large skillet over medium setting, heat ¼ cup of vegetable oil. Add the diced onion and cook for 7 to 8 minutes until they become soft and clear.
  2. Introduce the sliced squash into the skillet and continue cooking for 10 to 12 minutes until they soften up. Stir regularly to avoid browning and help release moisture.
  3. Line a colander with a towel to prevent the squash from falling through, and transfer the cooked squash and onions onto the towel to drain for at least 5 minutes, pressing gently to remove excess liquid.
  4. Combine the drained squash and onions with garlic powder, salt, black pepper, plain yogurt, the beaten egg, shredded cheddar cheese, and half of the grated Parmesan cheese in a bowl. Save the rest of the Parmesan for the following step.
  5. Mix remaining Parmesan cheese with finely crushed breadcrumbs.
  6. Transfer the squash mixture into a 1.5-quart baking dish, such as an 8×8 square pan.
  7. Distribute the breadcrumb mixture uniformly over the top of the casserole.
  8. Place in an oven preheated to 350°F and bake for 25 minutes.

  • Drain the cooked squash and onions on a towel-lined colander for at least 5 minutes to prevent the casserole from becoming watery.
