Ingredients
- 2 pounds (907 g) yellow squash sliced 1/4 inch thick (about 5 medium-sized squash)
- 1/4 cup (60 ml) vegetable oil
- 1/2 cup (120 ml) diced onion
- 1/2 teaspoon (3 ml) garlic powder
- 3/4 teaspoon (4 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/2 cup (120 ml) plain yogurt
- 1 large egg beaten
- 1 cup (240 ml) shredded cheddar cheese
- 1/2 cup (120 ml) grated Parmesan cheese
- 1 cup (240 ml) breadcrumbs finely crushed (about 25 crackers)
Instructions
- In a large skillet over medium setting, heat ¼ cup of vegetable oil. Add the diced onion and cook for 7 to 8 minutes until they become soft and clear.
- Introduce the sliced squash into the skillet and continue cooking for 10 to 12 minutes until they soften up. Stir regularly to avoid browning and help release moisture.
- Line a colander with a towel to prevent the squash from falling through, and transfer the cooked squash and onions onto the towel to drain for at least 5 minutes, pressing gently to remove excess liquid.
- Combine the drained squash and onions with garlic powder, salt, black pepper, plain yogurt, the beaten egg, shredded cheddar cheese, and half of the grated Parmesan cheese in a bowl. Save the rest of the Parmesan for the following step.
- Mix remaining Parmesan cheese with finely crushed breadcrumbs.
- Transfer the squash mixture into a 1.5-quart baking dish, such as an 8×8 square pan.
- Distribute the breadcrumb mixture uniformly over the top of the casserole.
- Place in an oven preheated to 350°F and bake for 25 minutes.
