Ingredients
- 1 cup sourdough discard
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup softened butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups rolled oats
- 1 cup chopped pecans
- 1/2 cup corn syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the egg, followed by vanilla extract and sourdough discard.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Stir in rolled oats, chopped pecans, and corn syrup until well distributed.
- Drop tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
