Ingredients

  • 1 cup sourdough discard
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup softened butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chopped pecans
  • 1/2 cup corn syrup


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the egg, followed by vanilla extract and sourdough discard.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Stir in rolled oats, chopped pecans, and corn syrup until well distributed.
  7. Drop tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until the edges are lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
