Description

Warm, fluffy sourdough discard pulls-apart dinner rolls with a delightful tang.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons instant yeast
  • 1 cup sourdough discard
  • 1/2 cup lukewarm milk
  • 1 large egg
  • 1/3 cup unsalted melted butter
  • 1 egg yolk + 1 teaspoon water (for egg wash) or 1 tablespoon milk + 1 teaspoon honey


Instructions

  1. In a large bowl, mix the dry ingredients: flour, sugar, salt, and yeast. Stir well until combined.
  2. Add the wet ingredients: milk, melted butter, egg, and sourdough discard; mix until a dough forms.
  3. Knead the dough until smooth and tacky, about 6 minutes with a stand mixer or 8-10 minutes by hand.
  4. Cover and let the dough rise in a warm place for about 80 minutes or until it doubles in size.
  5. Deflate the dough and divide it into nine equal pieces, shaping them into balls. Place in a lined baking pan.
  6. Let the rolls rise for another 40 minutes while preheating your oven to 350°F.
  7. Brush the rolls with an egg wash or a milk and honey wash.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool for 10 minutes before serving.

Use high-quality flour and fresh yeast for best results. Create a humid environment for optimal rising.
