Warm, fluffy sourdough discard pulls-apart dinner rolls with a delightful tang.
Ingredients
- 2 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 1/2 teaspoons instant yeast
- 1 cup sourdough discard
- 1/2 cup lukewarm milk
- 1 large egg
- 1/3 cup unsalted melted butter
- 1 egg yolk + 1 teaspoon water (for egg wash) or 1 tablespoon milk + 1 teaspoon honey
Instructions
- In a large bowl, mix the dry ingredients: flour, sugar, salt, and yeast. Stir well until combined.
- Add the wet ingredients: milk, melted butter, egg, and sourdough discard; mix until a dough forms.
- Knead the dough until smooth and tacky, about 6 minutes with a stand mixer or 8-10 minutes by hand.
- Cover and let the dough rise in a warm place for about 80 minutes or until it doubles in size.
- Deflate the dough and divide it into nine equal pieces, shaping them into balls. Place in a lined baking pan.
- Let the rolls rise for another 40 minutes while preheating your oven to 350°F.
- Brush the rolls with an egg wash or a milk and honey wash.
- Bake for 20-25 minutes until golden brown.
- Cool for 10 minutes before serving.

Use high-quality flour and fresh yeast for best results. Create a humid environment for optimal rising.
