Description
Fluffy and delicious pancakes made using leftover sourdough discard, perfect for breakfast or brunch.
Ingredients
- 1 cup all-purpose flour
- 1 cup sourdough discard
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter or oil
- Cooking spray or additional butter for greasing the pan
Instructions
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to mix well.
- In a separate bowl, whisk together the sourdough discard, milk, egg, and melted butter or oil until well combined.
- Pour the wet ingredients into the dry mixture and stir gently until just combined. Don’t worry if lumps remain; they will cook out.
- Heat a skillet over medium heat and grease it with cooking spray or butter.
- For each pancake, pour 1/4 cup of the batter onto the skillet.
- Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
For added flavor, consider mixing in vanilla extract or cinnamon, and try different toppings like fresh fruit or maple syrup.
