Description

Fluffy and delicious pancakes made using leftover sourdough discard, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sourdough discard
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • Cooking spray or additional butter for greasing the pan


Instructions

  1. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to mix well.
  2. In a separate bowl, whisk together the sourdough discard, milk, egg, and melted butter or oil until well combined.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined. Don’t worry if lumps remain; they will cook out.
  4. Heat a skillet over medium heat and grease it with cooking spray or butter.
  5. For each pancake, pour 1/4 cup of the batter onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Serve warm with your favorite toppings.

Notes

For added flavor, consider mixing in vanilla extract or cinnamon, and try different toppings like fresh fruit or maple syrup.
