Description

Sourdough discard crackers are a crunchy and satisfying snack made from leftover sourdough starter, easily customized with various seasonings.


Ingredients

  • 200 grams sourdough discard (1 cup stirred and unfed starter)
  • 2 Tbsp unsalted butter (melted)
  • 1/4 tsp fine sea salt
  • Seasonings to taste (e.g., flaky sea salt, everything bagel seasoning, sesame seeds)


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Melt the butter in a large measuring cup or mixing bowl and allow it to cool until just lukewarm.
  3. Add the sourdough discard and salt to the cooled butter, then stir with a spatula until well combined.
  4. Pour the mixture onto your prepared parchment-lined baking sheet and spread it into a thin, even layer.
  5. Lightly sprinkle the surface with flaky salt and your chosen seasonings.
  6. Bake for 10 minutes, then remove and score the dough into bite-size squares with a pizza cutter.
  7. Return to the oven for an additional 15–20 minutes, or until golden and firm. Allow cooling on the baking sheet.
  8. Once cool, store the crackers in an airtight container or zip bag.

Notes

Experiment with different seasonings for unique flavor profiles. Store the crackers properly to maintain their crispness.
