Description

Delicious and moist muffins made from sourdough discard and ripe bananas, perfect for a quick treat.


Ingredients

  • 1 cup sourdough discard
  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon cinnamon (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the mashed bananas and melted butter thoroughly.
  3. Stir in the sourdough discard, sugar, egg, and vanilla extract until well mixed.
  4. Add the baking soda, salt, and cinnamon (if using) and mix well.
  5. Gradually fold in the flour until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

For added flavor, consider folding in nuts or chocolate chips before pouring the batter into the muffin cups.
