Description

A delightful quick bread that combines the tanginess of sourdough, the sweetness of fresh blueberries, and the refreshing zest of lemon for a comforting treat.

Ingredients

  • 1 cup sourdough starter
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the sourdough starter, granulated sugar, melted butter, eggs, and milk until combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually combine the dry ingredients with the wet mixture, stirring until just mixed.
  5. Gently fold in the blueberries, lemon zest, and lemon juice.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For the best results, ensure your sourdough starter is active. Consider swapping some granulated sugar for brown sugar for added flavor.
