Description

A delightful blend of ripe bananas and rich chocolate chips in soft and chewy cookies, evoking cherished family memories.

Ingredients

  • 1 small overripe banana, mashed (approximately 1/4 cup)
  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. Combine the melted butter, brown sugar, and mashed banana in a large bowl until well mixed.
  2. Add the egg yolk and vanilla extract, stirring until nicely blended.
  3. Mix in the flour, salt, baking soda, and cinnamon until no streaks of flour remain.
  4. Fold in the chocolate chips carefully.
  5. Cover the dough and let it rest for about 15 minutes while preheating the oven.
  6. Line a cookie sheet with parchment paper and preheat the oven to 350°F.
  7. Drop 1-inch dough balls onto the prepared cookie sheet, spacing them about 2 inches apart.
  8. Bake for 10 to 11 minutes or until the edges are set with slightly underbaked middles.
  9. Allow the cookies to cool before enjoying.

Notes

For soft and chewy cookies, do not overmix the dough and let it rest before baking.
