Ingredients
- 1 small overripe banana, mashed (approximately 1/4 cup)
- 1/2 cup vegetable oil or melted butter
- 1 cup light brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup chocolate chips
Instructions
- Combine the melted butter, brown sugar, and mashed banana in a large bowl until well mixed.
- Add the egg yolk and vanilla extract, stirring until nicely blended.
- Mix in the flour, salt, baking soda, and cinnamon until no streaks of flour remain.
- Fold in the chocolate chips carefully.
- Cover the dough and let it rest for about 15 minutes while preheating the oven.
- Line a cookie sheet with parchment paper and preheat the oven to 350°F.
- Drop 1-inch dough balls onto the prepared cookie sheet, spacing them about 2 inches apart.
- Bake for 10 to 11 minutes or until the edges are set with slightly underbaked middles.
- Allow the cookies to cool before enjoying.
Notes
For soft and chewy cookies, do not overmix the dough and let it rest before baking.
