Deliciously soft banana bread cookies with chocolate chips and pecans, combining the nostalgic flavors of traditional banana bread.
Ingredients
- 1/2 cup unsalted butter
- 2 ripe bananas
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 1 1/2 cups chocolate chips
- 1/2 cup chopped pecans
Instructions
- Begin by browning the butter in a pan over medium heat until it turns golden brown. Transfer it to a heatproof bowl to cool slightly.
- Preheat your oven to 325ÂşF and prepare your baking sheet with parchment paper or a silicone mat.
- In a large bowl, mash the ripe bananas until smooth. Stir in the brown butter, both sugars, and vanilla extract, mixing until fluffy.
- In a separate bowl, combine the dry ingredients: flour, salt, baking soda, and cinnamon. Gradually mix the dry ingredients with the wet mixture just until combined; avoid overmixing.
- Gently fold in the chocolate chips and chopped pecans.
- Drop spoonfuls of the cookie batter onto the prepared baking sheet, spacing at least 1.5 inches apart.
- Bake for 12-18 minutes or until the edges begin to brown. Allow the cookies to cool slightly before enjoying.
Notes
For extra flavor, consider toasting the pecans before adding them to the batter.
