S’mores Energy Bites combine the flavors of a classic campfire treat into a nutritious snack that packs a punch with oats, nut butter, chocolate chips, and marshmallows.
Ingredients
- 1 cup oats
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/2 cup crushed graham crackers
- 1/4 cup mini marshmallows
- 1 tsp vanilla extract
Instructions
- In a large bowl, combine the oats, nut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
- Stir in the mini chocolate chips, crushed graham crackers, and mini marshmallows until evenly distributed.
- Use your hands to form the mixture into small balls or bites.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for about 10 minutes to set.
- Enjoy immediately or store in an airtight container in the fridge for up to a week.
Notes
If the mixture feels too dry, add a small amount of water or additional nut butter. Feel free to substitute mini chocolate chips with dried fruit or seeds.
