Description

S’mores Energy Bites combine the flavors of a classic campfire treat into a nutritious snack that packs a punch with oats, nut butter, chocolate chips, and marshmallows.


Ingredients

  • 1 cup oats
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1/2 cup mini chocolate chips
  • 1/2 cup crushed graham crackers
  • 1/4 cup mini marshmallows
  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, combine the oats, nut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
  2. Stir in the mini chocolate chips, crushed graham crackers, and mini marshmallows until evenly distributed.
  3. Use your hands to form the mixture into small balls or bites.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for about 10 minutes to set.
  6. Enjoy immediately or store in an airtight container in the fridge for up to a week.

Notes

If the mixture feels too dry, add a small amount of water or additional nut butter. Feel free to substitute mini chocolate chips with dried fruit or seeds.
