Ingredients
- 1/2 cup mayo
- 1/4 cup ketchup
- 1 tablespoon finely chopped dill pickles
- 1/2 teaspoon pickle juice
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon soy sauce
- 1/2 teaspoon rice vinegar
- 1 pound 80/20 ground beef
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 6 slices American cheese
- 6 street taco-sized flour tortillas
- Shredded lettuce
- Burger pickles
- Optional bacon
- Thin white onions
Instructions
- Combine all burger sauce ingredients in a small bowl and stir until mixed evenly. Set aside.
- In a separate bowl, add ground beef along with kosher salt and black pepper. Mix gently until combined.
- Divide the seasoned beef into six equal portions, rolling each portion into a ball.
- Gather tortillas, cheese, and toppings near your cooking area for a smooth cooking process.
- Preheat a flat top griddle to medium-high heat. Place the balls of ground beef on the griddle.
- Using a burger press, flatten each ball into patties, cooking for 15-20 seconds per patty.
- Allow the patties to cook undisturbed for about 40 seconds. Season if desired.
- Flip the patties and place a slice of cheese on each one. Add the flour tortillas to the griddle.
- Close the lid and let the burgers cook for about two minutes.
- Flip the tortillas, then transfer the patties onto the toasted tortillas.
- Top with shredded lettuce, burger sauce, burger pickles, and optional bacon or onions. Serve warm.

For best results, ensure the ground beef sits at room temperature for 15-20 minutes before cooking. Experiment with spices in the burger sauce for custom flavors.
