Description
A comforting slow cooker Swiss steak that evokes warm memories of family gatherings with tender meat and colorful vegetables.
Ingredients
- 2 lbs round steak or chuck steak, tenderized
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (if using cornstarch)
Instructions
- Pat the steak dry and season with salt and pepper, then dredge lightly in flour.
- Heat vegetable oil in a skillet over medium-high heat. Brown the steak on both sides for about 3-4 minutes.
- Transfer the browned steak to the slow cooker.
- Add the sliced onions, minced garlic, sliced carrots, and chopped celery to the slow cooker.
- Pour in the diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the meat is tender.
- If desired, use the cornstarch mixed with water to thicken the sauce 30 minutes before cooking ends.
- Adjust seasoning before serving, and enjoy with mashed potatoes, rice, or crusty bread.
