Description

A comforting slow cooker Swiss steak that evokes warm memories of family gatherings with tender meat and colorful vegetables.


Ingredients

  • 2 lbs round steak or chuck steak, tenderized
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch)


Instructions

  1. Pat the steak dry and season with salt and pepper, then dredge lightly in flour.
  2. Heat vegetable oil in a skillet over medium-high heat. Brown the steak on both sides for about 3-4 minutes.
  3. Transfer the browned steak to the slow cooker.
  4. Add the sliced onions, minced garlic, sliced carrots, and chopped celery to the slow cooker.
  5. Pour in the diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning. Stir to combine.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the meat is tender.
  7. If desired, use the cornstarch mixed with water to thicken the sauce 30 minutes before cooking ends.
  8. Adjust seasoning before serving, and enjoy with mashed potatoes, rice, or crusty bread.
