Ingredients

  • 454 g lean ground beef (1 lb)
  • 411 g fire-roasted diced tomatoes (1 can)
  • 240 ml cooked rice (1 cup)
  • 2 tablespoons (30 ml) ketchup
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) ground black pepper
  • 6 green bell peppers, tops and seeds removed (reserve tops)
  • 80 ml water (1/3 cup)


Instructions

  1. Warm a large frying pan over medium-high heat. Add the beef and stir until it is browned and breaks apart, about 5 to 7 minutes; remove and dispose of excess fat.
  2. Combine the cooked beef, diced tomatoes, rice, ketchup, Worcestershire sauce, and black pepper in a mixing bowl.
  3. Fill each green bell pepper with the beef mixture.
  4. Place the filled bell peppers in the slow cooker; replace the tops on each pepper. Pour water around the peppers’ bases.
  5. Set the cooker to Low and let it cook for 6 to 8 hours.

Notes

  • Make sure to remove any excess fat after browning the beef to prevent a greasy filling.
  • Enhance the flavor of the filling by using fire-roasted diced tomatoes.
