Ingredients
- 2 pounds (907 g) beef chops (about 900 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 4 cloves garlic, minced
- 1 cup (240 ml) beef broth (240 milliliters)
- 1 cup (240 ml) coconut cream (240 milliliters)
- 1/2 cup (120 ml) grated vegan cheese (50 grams)
- 1 tablespoon (15 ml) cornstarch (8 grams)
- 1 tablespoon (15 ml) water (15 milliliters)
- 1 teaspoon (5 ml) dried Italian herbs (1 gram)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season the beef chops with salt and black pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Sear the beef chops in the skillet for 3-4 minutes on each side until browned.
- Transfer the seared beef chops to the slow cooker.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Pour in the beef broth and scrape up any bits from the bottom of the skillet.
- Stir in the heavy cream, grated Parmesan cheese, and dried Italian herbs.
- Bring the sauce to a simmer and cook for 2-3 minutes until slightly thickened.
- In a small bowl, mix cornstarch with water to make a slurry.
- Slowly add the cornstarch slurry to the sauce, stirring constantly.
- Continue to simmer the sauce until it thickens, about 1-2 more minutes.
- Pour the garlic Parmesan sauce over the beef chops in the slow cooker.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, garnish the beef chops with chopped fresh parsley before serving.
