Ingredients
- – 1 medium-sized spaghetti squash (1 kg)
- – 2 Tbsp. (30 ml) vegetable oil
- – 1/2 cup (120 ml) chopped shallots
- – 3 garlic cloves, minced
- – 2 Tbsp. (16 g) all-purpose flour
- – 2 cups (480 ml) 2% reduced-fat milk
- – 2 Tbsp. (30 ml) fresh lemon juice
- – 1/4 cup (25 g) grated Parmesan cheese
- – 1/2 tsp (3 ml). kosher salt
- – 1/2 tsp (3 ml). freshly ground black pepper
- – 2 cups (280 g) shredded beef
- – 1/2 cup (60 g) shredded mozzarella cheese
- – Finely chopped parsley for garnish
Instructions
- Set your oven to 400°F to preheat.
- Slice the spaghetti squash lengthwise, from top to bottom, using a large knife. Apply a light layer of vegetable oil to the inside, then position it cut-side down on a baking tray. Roast for 30 to 40 minutes, until it becomes tender. Allow it to cool slightly for easier handling.
- In the meantime, warm vegetable oil in a large pan over medium heat. Sauté the shallots and minced garlic for about 3 minutes until they soften. Stir in the flour and cook for 2 more minutes. Slowly pour in the milk while whisking to ensure a smooth mixture. Let it gently simmer for 3 to 4 minutes until it thickens. Mix in the lemon juice, grated Parmesan, salt, and pepper. Take off the heat and incorporate the shredded beef.
- Remove the seeds from the spaghetti squash and discard them. Use a fork to pull out the strands resembling spaghetti and combine them with the beef Alfredo sauce.
- Evenly distribute the beef Alfredo filling into the hollowed squash halves and top with shredded mozzarella. Place back in the oven for another 10 minutes. Switch the oven to broil on HIGH and broil for 2 minutes, or until the cheese begins to brown in spots. Take it out of the oven and add a sprinkle of chopped parsley for garnish.
