Ingredients
- Ground beef, 1 pound (454 g) (450 grams)
- Olive oil, 2 tablespoons (30 ml)
- Onion, 1 large, chopped
- Carrot, 2 medium, diced
- Garlic, 3 cloves, minced
- Tomato paste, 2 tablespoons (30 ml) (30 grams)
- Canned lentils, 1 cup (240 ml) (200 grams), drained and rinsed
- Frozen peas, 1 cup (240 ml) (150 grams)
- Beef broth, 1 cup (240 ml)
- Soy sauce, 1 tablespoon (15 ml)
- Salt, 1 teaspoon (5 ml) (5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
- Cauliflower, 1 large head, chopped
- Vegetable oil, 2 tablespoons (30 ml) (30 grams)
- Coconut milk, 1/4 cup (60 ml)
- Vegan cheese, 1 cup (240 ml) (100 grams), shredded
- Parsley, 2 tablespoons (30 ml) (8 grams), chopped
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Remove the beef from the skillet and set aside, draining excess fat if necessary.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add chopped onion and diced carrots, cooking until the vegetables are softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add tomato paste and cook for another 2 minutes, stirring constantly.
- Return the cooked beef to the skillet.
- Stir in canned lentils and frozen peas.
- Pour in beef broth and Worcestershire sauce, stirring to combine.
- Season with salt and black pepper, and simmer for 10 minutes.
- Meanwhile, bring a large pot of water to a boil.
- Add chopped cauliflower to the boiling water and cook until tender.
- Drain the cauliflower and place it in a blender or food processor.
- Add butter and milk to the cauliflower, blending until smooth.
- Season the cauliflower mash with salt and black pepper to taste.
- Preheat the oven broiler to high.
- Spread the beef and vegetable mixture evenly in the skillet.
- Top the mixture with the cauliflower mash, spreading it evenly.
- Sprinkle shredded cheddar cheese over the cauliflower mash.
- Place the skillet under the broiler until the cheese is melted and golden brown.
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped parsley before serving.
