Ingredients

  • Ground beef, 1 pound (454 g) (450 grams)
  • Olive oil, 2 tablespoons (30 ml)
  • Onion, 1 large, chopped
  • Carrot, 2 medium, diced
  • Garlic, 3 cloves, minced
  • Tomato paste, 2 tablespoons (30 ml) (30 grams)
  • Canned lentils, 1 cup (240 ml) (200 grams), drained and rinsed
  • Frozen peas, 1 cup (240 ml) (150 grams)
  • Beef broth, 1 cup (240 ml)
  • Soy sauce, 1 tablespoon (15 ml)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Cauliflower, 1 large head, chopped
  • Vegetable oil, 2 tablespoons (30 ml) (30 grams)
  • Coconut milk, 1/4 cup (60 ml)
  • Vegan cheese, 1 cup (240 ml) (100 grams), shredded
  • Parsley, 2 tablespoons (30 ml) (8 grams), chopped


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  3. Remove the beef from the skillet and set aside, draining excess fat if necessary.
  4. In the same skillet, add the remaining tablespoon of olive oil.
  5. Add chopped onion and diced carrots, cooking until the vegetables are softened.
  6. Stir in minced garlic and cook for 1 minute until fragrant.
  7. Add tomato paste and cook for another 2 minutes, stirring constantly.
  8. Return the cooked beef to the skillet.
  9. Stir in canned lentils and frozen peas.
  10. Pour in beef broth and Worcestershire sauce, stirring to combine.
  11. Season with salt and black pepper, and simmer for 10 minutes.
  12. Meanwhile, bring a large pot of water to a boil.
  13. Add chopped cauliflower to the boiling water and cook until tender.
  14. Drain the cauliflower and place it in a blender or food processor.
  15. Add butter and milk to the cauliflower, blending until smooth.
  16. Season the cauliflower mash with salt and black pepper to taste.
  17. Preheat the oven broiler to high.
  18. Spread the beef and vegetable mixture evenly in the skillet.
  19. Top the mixture with the cauliflower mash, spreading it evenly.
  20. Sprinkle shredded cheddar cheese over the cauliflower mash.
  21. Place the skillet under the broiler until the cheese is melted and golden brown.
  22. Remove from the oven and let cool for a few minutes.
  23. Garnish with chopped parsley before serving.
