Description

A bold and flavorful Sizzling Cowboy Butter Steak topped with creamy cowboy butter, perfect for a heartwarming dinner.


Ingredients

  • 1 stick of butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon, for zest and juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for cast iron preparation


Instructions

  1. Let the steak reach room temperature and pat it dry; season generously with salt, pepper, and minced garlic.
  2. Heat a cast iron skillet over high heat until sizzling hot.
  3. Add a splash of avocado oil to the skillet, then place the seasoned steak in, listening for that satisfying sizzle.
  4. Sear one side for about 4-5 minutes, then flip the steak, adding the mostly melted butter, minced garlic, and herbs.
  5. Continuously spoon the melted butter mixture over the steak as it cooks.
  6. Check for doneness with a meat thermometer, aiming for medium-rare (130°F).
  7. Let the steak rest for at least 5 minutes.
  8. In a bowl, mix the softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices until creamy.
  9. Slice the steak against the grain and top each slice with a dollop of cowboy butter.

Notes

To enhance flavors, consider using fresh herbs instead of dried ones. Letting the steak rest ensures it retains its juices.
