Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 carrots, shredded (200 g)
- 1/2 onion, diced (50 g)
- 1/2 red bell pepper, diced (50 g)
- 2 large chicken breasts, chopped in small pieces (500 g)
- 2 cloves garlic, minced
- 1 (32 fluid ounce) container chicken broth (946 ml)
- 1 (14 ounce) can coconut milk (400 g)
- 2 tablespoons (30 ml) red curry paste
- 2 teaspoons (10 ml) salt
- 1/2 teaspoon (3 ml) ground black pepper
- 4 ounces rice noodles, broken in half (113 g)
Instructions
- Warm a large stock pot over medium heat. Pour in the oil and add the shredded carrots, diced onion, and bell pepper. Sauté for approximately 3 minutes. Incorporate the chicken pieces and stir thoroughly. Add the minced garlic. Cook until the chicken is cooked through and no longer pink inside, for 5 to 10 minutes.
- Stir in the chicken broth, coconut milk, red curry paste, salt, and black pepper. Allow the mixture to reach a boil, taking about 5 minutes. Introduce the rice noodles and let the soup return to a boil. Lower the heat to a gentle simmer and cook for around 3 minutes.
- Place a lid on the pot, take off the heat, and let it rest until the noodles are soft, for 5 to 10 minutes.

- For a more flavorful soup, opt for full-fat coconut milk over light coconut milk.
- Add extra vegetables like spinach, broccoli, or mushrooms for added nutrition and variety.
