Description

Learn how to make a delicious potato soup with just 5 simple ingredients! This easy recipe is perfect for a quick and satisfying meal.

Ingredients

  • 6 green onions (90g), thinly sliced, white and green parts separated
  • 5-6 cups (1320 ml) chicken or vegetable broth (1.2-1.4 L)
  • 2 lbs. frozen hash browns or fresh Russet potatoes, cubed or shredded (900g)
  • 2 Tbsp (30 ml). Cajun seasoning
  • 1 cup shredded sharp cheddar, plus extra for serving (100g)

Instructions

  1. In a large pot, combine the sliced white portions of the green onions, broth, potatoes, and seasoning. Warm up over medium-high heat until the mixture begins to simmer gently, stirring every so often. Lower the heat to medium-low, cover the pot, and let it cook for 10 minutes, stirring occasionally.
  2. When the potatoes are tender, use an immersion blender to mostly blend the soup until it thickens. (Alternatively, you can transfer the soup to a regular blender to puree until smooth.) Pour the soup back into the pot, and mix in the cheddar until it is fully incorporated.
  3. Serve the soup hot, topped with additional cheddar and the green parts of the green onions.
  4. *Note that this is a basic 5-ingredient potato soup. Feel free to add more spices if desired. This version is straightforward and simple.

Notes

  • For a richer flavor, try using homemade chicken or vegetable broth instead of store-bought.
  • Experiment with unique cheeses like Gruyere or pepper jack to give this classic soup a twist.
  • Consider leaving the skin on fresh Russet potatoes for added texture and nutrients.
