Ingredients

  • 1 whole English cucumber, washed, peeled in any especially thick areas (see note)
  • Kosher salt
  • 2 medium cloves garlic, minced (about 2 teaspoon (10 ml) s)
  • 1 teaspoon (5 ml) rice vinegar
  • 1/2 teaspoon (3 ml) sesame oil (optional )


Instructions

  1. Position the cleaned cucumber on a sturdy, level area. Using the flat side of a robust cleaver or the underside of an 8-inch frying pan, strike the cucumber forcefully yet carefully along its entire length until it is thoroughly crushed. Cut the cucumber into 1-inch sections and place them in a strainer situated over a bowl. Sprinkle with salt and chill for 10 minutes. Remove the drained liquid and move the cucumber pieces to the bowl.
  2. Incorporate the minced garlic, rice vinegar, and sesame oil (if desired) into the bowl and mix everything together. This cucumber dish is at its best when served immediately; it will become soggy if left in the refrigerator.
