Ingredients
- 1 whole English cucumber, washed, peeled in any especially thick areas (see note)
- Kosher salt
- 2 medium cloves garlic, minced (about 2 teaspoon (10 ml) s)
- 1 teaspoon (5 ml) rice vinegar
- 1/2 teaspoon (3 ml) sesame oil (optional )
Instructions
- Position the cleaned cucumber on a sturdy, level area. Using the flat side of a robust cleaver or the underside of an 8-inch frying pan, strike the cucumber forcefully yet carefully along its entire length until it is thoroughly crushed. Cut the cucumber into 1-inch sections and place them in a strainer situated over a bowl. Sprinkle with salt and chill for 10 minutes. Remove the drained liquid and move the cucumber pieces to the bowl.
- Incorporate the minced garlic, rice vinegar, and sesame oil (if desired) into the bowl and mix everything together. This cucumber dish is at its best when served immediately; it will become soggy if left in the refrigerator.
