Ingredients

  • 1/3 cup (80 ml) sour cream
  • 1/3 cup (80 ml) mayonnaise
  • 1 1/2 Tbsp (23 ml) lime juice, squeezed from 1 medium lime
  • 3/4 tsp (4 ml) garlic powder
  • 3/4 tsp (4 ml) Sriracha sauce, or to taste
  • 8 white corn tortillas, (small, 6” diameter), or Hard Taco Shells
  • 1/2 small purple cabbage, 2 cup (480 ml) s shredded
  • 1 large avocado, pitted, peeled, and diced
  • 1/2 red onion, diced
  • 4 oz (113 g) Cotija cheese, (1 cup (240 ml) grated on a box grater)
  • 1/4 bunch cilantro, coarsely chopped
  • 1 lime, cut into 8 wedges
  • 1 lb (454 g) shrimp (medium or large), raw
  • 1 garlic clove, pressed or minced
  • 1/2 tsp (3 ml) sea salt
  • 1/4 tsp (1 ml) black pepper
  • 1/4 tsp (1 ml) ground cumin
  • 1/4 tsp (1 ml) cayenne pepper
  • 1 Tbsp (15 ml) olive oil

Instructions

  1. Create the Shrimp Taco Dressing – Combine the dressing components in a small bowl by whisking them together, then set aside to allow the flavors to blend. If you like, transfer it to a squeeze bottle for easy application.
  2. Prepare the Garnishes – Shred the cabbage finely, dice the avocado into small cubes, chop the red onion into small pieces, and roughly chop the cilantro. Place each topping in separate bowls for convenient serving.
  3. Flavor the Shrimp – Defrost the shrimp and use paper towels to dry them thoroughly. Put them in a medium-sized bowl, add the spices and garlic, and mix everything until well combined.
  4. Cook the Shrimp – Heat a large non-stick skillet over medium to high heat, add olive oil, and then place the shrimp in a single layer. Sauté each side for 1-2 minutes, or until the shrimp are fully cooked through (white on the inside with pink and red tinges on the outside). Once done, move them to a serving plate and let them cool slightly.
  5. Warm the Tortillas – You can lightly toast the tortillas using a gas stove, a griddle, or a frying pan.
  6. Assemble the Tacos – Construct the tacos by layering the garnishes and the shrimp on each toasted tortilla. Finish by drizzling with the prepared dressing before serving.

Notes

  • Enhance lime flavor by adding zest to the dressing before juicing the limenInclude tender cilantro stems for added flavor and texturenArrange shrimp in a single layer for even cooking; cook in batches if needed
