Ingredients
- 2 cups cooked rice
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the minced garlic and cook until fragrant.
- Toss the shrimp into the skillet and cook until they turn pink and opaque, about 3-4 minutes.
- Push the shrimp to the side and pour in the beaten eggs. Scramble until fully cooked.
- Add the mixed vegetables and cooked rice, stirring well to combine.
- Pour in the soy sauce, stirring until heated through and evenly coated.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Use day-old rice for best results. Customize with your favorite vegetables and adjust soy sauce to taste.
