  • 1½ teaspoons chipotles in adobo sauce, finely chopped (7.5ml)
  • 1/4 teaspoon salt (1.25g)
  • 1 pound raw shrimp (450g)
  • 1 large egg
  • 1/4 cup packed cilantro leaves (15g)
  • 3/4 teaspoon salt (3.75g)
  • 1/2 teaspoon ground cumin (1g)
  • 1/2 teaspoon ground coriander (1g)
  • vegetable oil for the pan
  • about 8 thin slices vine-ripened tomato
  • 1 small handful baby lettuces
  • 4 burger buns, lightly toasted


Instructions

  1. In a mixing bowl, mash the avocado and combine it with diced red onion, lime juice, chopped chipotles, and a pinch of salt.
  2. Using a food processor, chop the shrimp finely. Incorporate the egg, cilantro leaves, a bit of salt, cumin, and coriander, and blend well. Shape the mixture into burger patties.
  3. Warm up some vegetable oil in a skillet and fry the patties until they achieve a golden hue on both sides.
  4. Assemble by placing a shrimp patty on each toasted bun, followed by a generous layer of the avocado mix, slices of tomato, and a handful of baby lettuces.
