Ingredients

- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) paprika (5 grams)
- Salt, to taste
- Black pepper, to taste
- 2 cup (480 ml) s cooked brown rice (370 grams)
- 1 large avocado, diced
- 1 cup (240 ml) cherry tomatoes, halved (150 grams)
- 1/4 cup (60 ml) red onion, finely chopped (40 grams)
- 1 tablespoon (15 ml) lime juice (15 milliliters)
- 1/4 cup (60 ml) fresh cilantro, chopped (about 4 grams)
Instructions
- In a bowl, combine shrimp, olive oil, garlic powder, paprika, salt, and black pepper.
- Toss the shrimp until evenly coated with the seasoning mixture.
- Heat a skillet over medium-high heat.
- Add the seasoned shrimp to the skillet in a single layer.
- Cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- In a large bowl, combine the cooked brown rice, diced avocado, cherry tomatoes, and red onion.
- Drizzle lime juice over the rice and vegetable mixture.
- Add the cooked shrimp to the bowl.
- Gently toss all ingredients together until well mixed.
- Sprinkle chopped fresh cilantro over the top.
- Serve immediately.
