Description

A warm and inviting soup that combines the classic flavors of shepherd’s pie, featuring ground beef, tender potatoes, and a medley of colorful vegetables.

Ingredients

  • 1 pound ground beef
  • 2 cups potatoes, diced
  • 1 cup cheese, shredded
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, and sauté until translucent.
  3. Add the ground beef to the pot and cook until browned. Drain any excess fat.
  4. Stir in the diced potatoes and mixed vegetables.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  7. Stir in the shredded cheese until melted and season with salt and pepper.
  8. Serve hot and enjoy your comforting Shepherd’s Pie Soup!

Notes

Opt for fresh or frozen vegetables for the best taste. Adjust the seasoning to your preference, and consider mashing some potatoes for a creamier texture.
