Ingredients

  • – 1 pound (454 g) (450 grams) chicken or turkey sausage
  • – 2 large sweet potatoes, peeled and cubed
  • – 2 large apples, cored and sliced
  • – 1 large red onion, sliced
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 teaspoon (5 ml) dried thyme (1.5 grams)
  • – 1 teaspoon (5 ml) ground cinnamon (2 grams)
  • – Salt, to taste
  • – Black pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large sheet pan with parchment paper or lightly grease it.
  3. Place the cubed sweet potatoes on the sheet pan.
  4. Add the sliced apples and red onion to the pan.
  5. Drizzle the olive oil over the vegetables and fruit.
  6. Sprinkle the dried thyme, ground cinnamon, salt, and black pepper over the mixture.
  7. Toss everything together on the sheet pan to coat evenly.
  8. Arrange the chicken or turkey sausages on top of the mixture.
  9. Ensure everything is spread out in a single layer.
  10. Roast in the preheated oven for 25-30 minutes.
