Ingredients

  • 1 cup (240 ml) quinoa (185 grams)
  • 2 medium zucchinis, sliced
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • 1 teaspoon (5 ml) dried basil (1 gram)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 grams)
  • 2 cup (480 ml) s shredded mozzarella cheese (200 grams)
  • 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
  • 1 cup (240 ml) milk (240 milliliters)
  • 2 large eggs
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse 1 cup of quinoa under cold water.
  3. Cook the quinoa according to package instructions.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  5. Add the chopped onion and sauté until translucent.
  6. Stir in the minced garlic and sauté for 1 minute.
  7. Add sliced zucchinis and cook until slightly soft, about 5 minutes.
  8. Stir in 1 teaspoon dried oregano and 1 teaspoon dried basil.
  9. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  10. In a large bowl, whisk together 1 cup milk and 2 large eggs.
  11. Add cooked quinoa, zucchini mixture, and 2 cups shredded mozzarella cheese to the bowl.
  12. Mix in 1/2 cup grated Parmesan cheese.
  13. Transfer the mixture to a greased baking dish.
  14. Spread evenly and sprinkle with 1/4 cup chopped fresh parsley.
  15. Bake in the preheated oven for 25-30 minutes, until golden and set.
  16. Let it cool for a few minutes before serving.
