Ingredients
- 1 cup (240 ml) quinoa (185 grams)
- 2 medium zucchinis, sliced
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon (5 ml) dried oregano (1 gram)
- 1 teaspoon (5 ml) dried basil (1 gram)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 grams)
- 2 cup (480 ml) s shredded mozzarella cheese (200 grams)
- 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
- 1 cup (240 ml) milk (240 milliliters)
- 2 large eggs
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse 1 cup of quinoa under cold water.
- Cook the quinoa according to package instructions.
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and sauté for 1 minute.
- Add sliced zucchinis and cook until slightly soft, about 5 minutes.
- Stir in 1 teaspoon dried oregano and 1 teaspoon dried basil.
- Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- In a large bowl, whisk together 1 cup milk and 2 large eggs.
- Add cooked quinoa, zucchini mixture, and 2 cups shredded mozzarella cheese to the bowl.
- Mix in 1/2 cup grated Parmesan cheese.
- Transfer the mixture to a greased baking dish.
- Spread evenly and sprinkle with 1/4 cup chopped fresh parsley.
- Bake in the preheated oven for 25-30 minutes, until golden and set.
- Let it cool for a few minutes before serving.
