Ingredients

  • 2 teaspoon (10 ml) s olive oil
  • 2 1/2 cup (600 ml) s sliced zucchini (include 2-3 flowers if desired)
  • 1 small shallot chopped
  • 1/4 teaspoon (1 ml) salt (or to taste)
  • 2 dashes pepper
  • 1-2 tablespoon (23 ml) chopped fresh parsley
  • 2 large eggs
  • 3/4 cup (180 ml) freshly grated Parmesan cheese
  • 3 tablespoon (45 ml) s whole / whipping cream
  • 1/2 cup (120 ml) fontal cheese shredded (or Gruyere)


Instructions

  1. Prepare the Savory Pie according to the instructions provided.
  2. As the pastry cools, start preparing the filling. Heat the olive oil in a medium skillet and add the zucchini slices and chopped shallot. Season with salt, pepper, and fresh parsley. Stir frequently until the mixture reaches a golden color. Allow it to cool to a warm temperature.
  3. Set your oven to preheat at 350°F (180°C). Cover a medium-large baking sheet with parchment paper.
  4. In a medium-large bowl, use a fork to whisk the eggs, Parmesan cheese, and cream. Gently incorporate the cooled zucchini mixture and shredded fontal cheese.
  5. Roll out the pastry to form a circle approximately 11-12 inches (30-32 cm) wide and about â…› inch thick. Place this on the parchment-lined baking sheet.
